BEEF STROGANOFF:
1 pound Mountain Run Farm ground beef
1 medium onion
1/2 cup mushrooms (sliced)
8 oz. sour cream
1. Brown ground beef, onion, and sliced mushrooms.
2. Add 8 oz. sour cream and heat together to desired temperature.
BALSAMIC BEEF ROAST:
1 Mountain Run Farm Chuck Roast
1 T. cracked black peppercorns
3 cloves garlic
3 T. Balsamic vinegar
1/4 cup soy sauce
2 T. Worcestershire sauce
2 t. dry mustard
Rub the cracked pepper and garlic into the roast. Place the roast in the crockpot and make several shallow slits in the top of the roast. In a small bowl, combine the remaining ingredients and pour over the meat. Cover; cook on low for 8 to 10 hours or on high for 4 to 5 hours.
KOREAN BEEF:
1 Mountain Run Farm London Broil
1/2 cup soy sauce
2 T. sesame oil
1 bunch green onions, finely chopped
6 cloves garlic, peeled and mashed
1 T. sesame seeds
1/4 t. cayenne pepper
pinch of stevia powder or sugar
Using a very sharp and heavy knife, slice the London Broil as thinly as possible ACROSS the grain and on the diagonal. (This will be easier if the meat is partially frozen.) Mix other ingredients and marinate beef in the mixture, refrigerated, for several hours or overnight. Fold or ‘ribbon’ the strips and stick them on skewers, making four to six brochettes. Cook on barbecue or under grill, about 5 to 7 minutes per side. Meat should still be medium rare inside.
